Vegetable Frittata

Ingredients:

4 eggs

½ cup milk

½ cup mixed vegetables (bell peppers, spinach, onions, mushrooms)

½ cup shredded cheese (cheddar or feta)

1 tbsp olive oil

Salt and pepper to taste

Instructions:

Preheat oven to 180°C (350°F). Grease a baking dish or oven-safe skillet.

Whisk eggs, milk, salt, and pepper in a mixing bowl until well combined.

Heat olive oil in a pan over medium heat. Add chopped vegetables and sauté for 3-4 minutes until slightly softened.

Pour the egg mixture into the pan, stirring gently to distribute the vegetables evenly.

Sprinkle shredded cheese on top.

Transfer the pan to the oven and bake for 12-15 minutes until the eggs are fully set.

Let it cool slightly, then slice and serve.
