Ingredients:
2 chicken breasts (thinly sliced)
1 cup mixed vegetables (carrots, bell peppers, broccoli)
2 tbsp soy sauce
1 tbsp olive oil
1 clove garlic (minced)
1 tsp ginger (grated)
1 tsp sesame seeds (optional)
Instructions:
Heat 1 tbsp olive oil in a large pan or wok over medium-high heat.
Add sliced chicken and cook for 5 minutes, stirring occasionally, until browned. Remove and set aside.
In the same pan, add garlic and ginger and sauté for 30 seconds.
Add mixed vegetables and stir-fry for 3-4 minutes until tender-crisp.
Return the chicken to the pan and add soy sauce. Mix well.
Cook for another 2 minutes, then sprinkle with sesame seeds.
Serve hot with rice or noodles.
Tip: Add 1 tsp honey for a slightly sweet glaze.
