A Mediterranean-inspired quiche with creamy feta and fresh spinach.
Ingredients:
1 pre-made pie crust
1 ½ cups fresh spinach (chopped)
½ cup feta cheese (crumbled)
4 eggs
1 cup heavy cream
½ cup milk
½ tsp salt
¼ tsp black pepper
½ tsp garlic powder
1 tbsp olive oil
Instructions:
Preheat oven to 190°C (375°F).
Roll out the pie crust into a 9-inch dish, press it in, and prick the bottom with a fork.
Blind bake the crust for 10 minutes, then set aside.
Heat olive oil in a pan over medium heat and sauté spinach for 2-3 minutes until wilted. Let cool slightly.
In a bowl, whisk together eggs, cream, milk, salt, pepper, and garlic powder.
Spread the spinach and crumbled feta evenly over the baked crust.
Pour the egg mixture on top.
Bake for 35-40 minutes until set.
Let cool for 5 minutes before slicing.
Tip: Add sundried tomatoes for extra flavor.
