Oatmeal Banana Cake (Healthy & Sugar-Free)
Ingredients:
– 2 ripe bananas (mashed)
– 2 large eggs
– ½ cup Greek yogurt (or unsweetened applesauce)
– ¼ cup **honey or maple syrup** (optional)
– 1 tsp vanilla extract
– 1 ½ cups oats (blended into flour or left whole for texture)
– 1 tsp baking powder
– ½ tsp baking soda
– ½ tsp cinnamon
– ¼ tsp salt
– ¼ cup milk (dairy or plant-based)
Instructions:
1. Preheat Oven:
– Set your oven to 175°C (350°F).
– Grease a small cake or loaf pan or line it with parchment paper.
2. Blend Oats (if using oat flour):
– Blend the oats into a fine flour using a food processor or blender.
3. Mix Wet Ingredients:
– In a bowl, mash the bananas.
– Add eggs, Greek yogurt, honey, vanilla extract, and milk. Mix well.
4. Combine Dry Ingredients:
– In another bowl, mix oat flour (or whole oats), baking powder, baking soda, cinnamon, and salt.
5. Mix & Bake:
– Gently mix dry ingredients into the wet ingredients. Stir until just combined.
– Pour batter into the cake pan and bake for 25-30 minutes, or until a toothpick comes out clean.
6. Cool & Serve:
– Let the cake cool for at least 10 minutes before slicing.
– Optionally, top with chopped nuts, dark chocolate chips, or a drizzle of almond butter.
Tips:
– For extra protein, add 1 scoop of vanilla protein powder.
– Make it dairy-free by using coconut yogurt and almond milk.
– Store in the fridge for 4-5 days or freeze slices for later.
