Almond Flour Carrot Cake (Gluten-Free & Healthy)

Ingredients:
– 2 cupsalmond flour
– 1 tsp baking soda
– 1 tsp cinnamon
– ¼ tsp nutmeg** (optional)
– ¼ tsp salt
– 3 large eggs
– ¼ cup honey or maple syrup
– 2 tbsp coconut oil (melted)
– 1 tsp vanilla extract
– 1 cup grated carrots
– ¼ cup chopped walnuts or pecans (optional)
– ¼ cup raisins (optional)

Instructions:

1. Preheat Oven:
– Set your oven to 175°C (350°F).
– Grease a small cake pan or line it with parchment paper.

2. Mix Dry Ingredients:
– In a bowl, whisk together almond flour, baking soda, cinnamon, nutmeg, and salt.

3. **Mix Wet Ingredients:**
– In another bowl, whisk eggs, honey, coconut oil, and vanilla extract.

4. Combine:
– Slowly add the dry ingredients into the wet mixture.
– Fold in the grated carrots, nuts, and raisins.

5. Bake:
– Pour batter into the prepared cake pan.
– Bake for 25-30 minutes, or until a toothpick comes out clean.

6. Cool & Serve:
– Let the cake cool before slicing.
– Optionally, top with a healthy **Greek yogurt + honey + vanilla frosting.

Tips:
– Make it dairy-free by using **coconut yogurt** for the frosting.
– For extra fluffiness, separate the eggs and beat the whites until fluffy before folding them in.
– Store in the fridge for up to 5 days.
