Chia Seed Vanilla Cake (Gluten-Free & Healthy)
Ingredients:
– 1 ½ cups almond flour** (or oat flour for a denser texture)
– 2 tbsp chia seeds
– 1 tsp baking powder
– ½ tsp baking soda
– ¼ tsp salt
– 3 tbsp honey or maple syrup (or sugar substitute)
– 3 large eggs
– ½ cup Greek yogurt (or coconut yogurt for dairy-free)
– ¼ cup almond milk (or any milk of choice)
– 1 tsp vanilla extract
Instructions:
1. Preheat Oven:
– Set your oven to 175°C (350°F).
– Grease a small cake pan or line it with parchment paper.
2. Prepare Chia Seeds:
– Mix chia seeds with almond milk and let sit for 5-10 minutes to form a gel.
3. Mix Dry Ingredients:
– In a bowl, whisk together almond flour, baking powder, baking soda, and salt.
4. Mix Wet Ingredients:
– In another bowl, whisk eggs, honey, vanilla extract, and Greek yogurt.
– Add the chia gel and mix well.
5. Combine:
– Slowly add dry ingredients into the wet mixture and stir until smooth.
6. Bake:
– Pour batter into the cake pan.
– Bake for 25-30 minutes, or until a toothpick comes out clean.
7. Cool & Serve:
– Let the cake cool before slicing.
– Optionally, top with a Greek yogurt + honey frosting or fresh berries.
Tips:
– For a vegan version, replace eggs with **flax eggs (1 tbsp flaxseed + 3 tbsp water per egg).
– Add a bit of lemon zest for extra flavor.
– Store in the fridge for 4-5 days.
