A rich, savory quiche with mushrooms and sweet caramelized onions.
Ingredients:
1 pre-made pie crust
1 ½ cups mushrooms (sliced)
1 onion (thinly sliced)
2 tbsp butter
½ cup shredded Gruyère cheese
4 eggs
1 cup heavy cream
½ cup milk
½ tsp salt
¼ tsp black pepper
¼ tsp thyme (optional)
Instructions:
Preheat oven to 190°C (375°F).
Roll out and blind bake the pie crust for 10 minutes, then set aside.
In a pan, melt butter and cook onions over low heat for 15 minutes until caramelized. Set aside.
In the same pan, cook mushrooms over medium heat for 5 minutes until soft.
In a bowl, whisk together eggs, cream, milk, salt, pepper, and thyme.
Spread caramelized onions, mushrooms, and cheese evenly over the crust.
Pour the egg mixture on top.
Bake for 35-40 minutes until set.
Let cool for 5 minutes before slicing.
Tip: Use a mix of wild mushrooms for a more intense flavor.
