Quinoa and Roasted Garlic Cake

Ingredients:

1 cup cooked quinoa

3 eggs

100g chickpea flour

1 head of roasted garlic (mashed)

1 tsp baking powder

1/2 tsp salt

3 tbsp olive oil

Preparation:

Preheat oven to 180°C (356°F).

Roast garlic in the oven until soft, then mash.

In a bowl, mix eggs, olive oil, and mashed roasted garlic.

Add chickpea flour, cooked quinoa, baking powder, and salt. Mix well.

Pour into a loaf pan and bake for 30–35 minutes.
